Dairy Free Swedish Almond Coffee Cake Recipe
Dairy-Free Swedish Almond Snacking Cake Ingredients:
- 1/2 cup sliced almonds
- 1/3 cup vegetable oil
- 2/3 cup Silk Almondmilk 96oz Unsweetened Vanilla
- 1 egg, beaten
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- zest of one lemon
- 1 1/4 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/4 cup flour
Combine all of the wet ingredients in a bowl. Whisk together. Add dry ingredients (except for the almonds) together and mix into the wet ingredients.
Prepare an 8" round cake pan by cutting a circle of waxed paper or parchment paper to line the bottom of the pan. Coat the bottom of the pan with the sliced almonds, then pour the prepared batter on top of the almonds.
Bake at 350 degrees Fahrenheit for 45-50 minutes, until the cake is a light golden color, and a test skewer comes out of the cake clean.
Let cool completely, then remove the cake from the pan, and remove the waxed paper from the inverted bottom (now the top!) of the cake.
Dust with powdered sugar.
Cut a slice, pour yourself a cup of coffee, and enjoy!
