Dairy Free Swedish Almond Cake Recipe

I love using Silk Almondmilk 96oz Unsweetened Vanilla for making smoothies (it gives such an amazing, smooth, creamy mouth-feel to a smoothie, and at only 30 calories/cup, keeps the calorie count low).  But I'd never tried baking with it, until I decided it would be absolutely perfect for making a dairy-free version of one of my favorite recipes, Swedish almond cake.

I picked up my Silk Almondmilk 96oz Unsweetened Vanilla at Walmart; it's easy to find in the dairy case.  And if you go through a lot of Almond milk, it's awesome to be able to get the bigger 96oz package now.

Swedish almond cake is incredibly easy to make (you don't even need a mixer!), and has so much flavor.  It's perfect with a cup of coffee (and I won't tell anyone if you eat it for breakfast--I did, too).  I even made a video showing just how quickly and easily this tasty cake comes together:

Dairy Free Swedish Almond Coffee Cake Recipe

Dairy-Free Swedish Almond Snacking Cake Ingredients:

  • 1/2 cup sliced almonds
  • 1/3 cup vegetable oil
  • 2/3 cup Silk Almondmilk 96oz Unsweetened Vanilla
  • 1 egg, beaten
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • zest of one lemon
  • 1 1/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/4 cup flour

Combine all of the wet ingredients in a bowl.  Whisk together.  Add dry ingredients (except for the almonds) together and mix into the wet ingredients.

Prepare an 8" round cake pan by cutting a circle of waxed paper or parchment paper to line the bottom of the pan.  Coat the bottom of the pan with the sliced almonds, then pour the prepared batter on top of the almonds.

Bake at 350 degrees Fahrenheit for 45-50 minutes, until the cake is a light golden color, and a test skewer comes out of the cake clean.

Let cool completely, then remove the cake from the pan, and remove the waxed paper from the inverted bottom (now the top!) of the cake.

Dust with powdered sugar.

Cut a slice, pour yourself a cup of coffee, and enjoy!
