DIY Project: Lollipop Topiaries from the Cornish Fairy Party

I love cake pops as much as anyone. Bakerella, you had an awesome idea. But they're on everyone's dessert tables. I wanted something of my own invention. Enter the lollipop topiary.


 

But what are they, you might be asking? Well, a topiary is a bush or tree that has been trimmed and trained into a very tailored shape. A classic is the ball shape:

But they can be completely astounding and elaborate, too.

(The first, more basic example obviously inspired my confection version!)

 
My lollipop topiaries are simply lollipops covered in royal icing. They're quick, absolutely gorgeous, and were the highly contested prizes of the dessert table. I'll definitely be making these again!
