At the A is for Addalyn first birthday brunch, I wanted to serve (mostly) desserts that started with the letter "A." It was a fun way to stick with the theme. Today, I'm sharing an insanely easy recipe for Angel Food Coconut Macaroons.
They're quick to whip up, light, and delicious. All things I love in a cookie.
Ingredients for Angel Food Coconut Macaroon Cookies
- one box of angel food cake mix (16 oz)
- 1/2 cup water
- 1 1/2 t vanilla (or coconut extract, if you prefer)
- 2 cups flaked coconut
Instructions? Dump it in your mixing bowl. Mix. I told you it was easy.
Drop spoonfuls on a baking sheet lined with parchment paper or a silpat. Trust me, don't skip this step. These things, with all the egg whites in the cake mix, can really stick to surfaces. I was very glad to have used the parchment paper.
Bake at 350 for about 10-12 minutes, until the cookies begin to turn lightly golden around the edges.
Yum! I think next time I'll make them half this size, and make little sandwiches with some fresh lime curd. Does that sound like a little bite of tropical heaven or what?
