Birthday Cake Popcorn Recipe:
- 6-8 cups of popcorn, popped
- 6 oz white chocolate candy melts
- 1/3 cup cake mix
- sprinkles, to taste
Pop the popcorn, either with an air popper or with a microwave popper. I love my microwave popcorn popper from Nordic Ware. It's fast, easy, and doesn't require any added fat. It's also a lot more compact to store than my old air popper. No overheating, either!
Melt 6 ounces of white chocolate candy melts and mix into the popped popcorn. Once coated with melted white chocolate, add 1/4 cup to 1/3 cup of white cake mix powder to the chocolate coated popcorn. Toss to cover evenly.
Spread the chocolate and popcorn mixture on a baking sheet, and add sprinkles. Pop the pan of popcorn in the fridge until the chocolate has cooled and hardened.
You don't have to spread out the popcorn on a sheet pan, but spreading it thin before letting the chocolate harden makes it much easier to break up into individual small bites of popcorn later. Letting the popcorn cool and harden in the bowl is not a particularly good idea. Trust me. I learned that one the hard way.
