Are you making pies today? I am! That's my contribution to our family Thanksgiving gathering this year. And, getting to be in charge of the pies means that I also get to indulge in another favorite holiday tradition: turning the leftover pie dough into cinnamon sugar pie scrap cookies.
I always end up with extra dough, mostly because my favorite pie crust recipe makes a generous batch of dough. I like it that way. I don't have to struggle to stretch the dough to the pan, over-working it in the process.
I decided to get a little fancy this year with our pie scraps. Usually, I just roll out the dough and cut rectangular strips. This time I pulled out some fall leaf and acorn shaped cookie cutters.
Brush the pie crust with a little water and sprinkle with cinnamon sugar. Bake at 400 for about 12-15 minutes. The best part? Getting to eat them today! It'll tide me over until I can eat those glorious pies tomorrow.
