We're back in school, and the new fall after-school activities have been settled, and between the two girls and their activities, we are busy. Mondays and Wednesdays especially this year, for some reason. Cooking dinner is even more of a challenge those days than normal, but I've come up with a delicious eggplant parmesan sandwich that takes less than 20 minutes to make. Twenty minutes I can handle on those busy nights.
Mmm, hot cheesy goodness. And vegetables! Always good to incorporate those in the meal.
The secret to my quick dinner success? Mozzarella sticks.
Easy Eggplant Parmesan Sandwich Recipe:
- Breaded mozzarella sticks
- ciabatta rolls
- fresh eggplant
- crushed, canned tomatoes
- olive oil
Preheat the oven according to the directions on the box. While the oven is heating, peel and slice the eggplant.
Brush the eggplant lightly with olive oil, and place on a baking sheet. I was able to fit all of my eggplant slices and the mozzarella sticks on one pan! I like that; the food cooks evenly and there are fewer things to clean.
Bake for 15 minutes at 450 degrees. The slices of eggplant will be perfectly roasted, and the mozzarella sticks will be hot and melty inside, with a crisp exterior.
Top the mozzarella sticks with some crushed tomato sauce and slices of roasted eggplant.
All that's left to do? Enjoy the amazing cheesy goodness! It really does have all the fabulous flavor of an eggplant parmesan sandwich, but without all the mess and effort it usually takes.
The mozzarella sticks were already a family favorite for a special snack, but now that I've figured out this dinner trick, I don't think I'll ever make regular eggplant parmesan again. This is just too easy and delicious!
