Recipe for Mushrooms on Toast

Mushrooms on toast is a classic British recipe that's perfect for brunch, a light dinner, or an appetizer.  This recipe for Mushrooms on Toast is a mushroom-lover's dream--full of hearty flavor, and so fast and easy to make!

I absolutely adore mushrooms, so I was delighted when we picked mushrooms as our theme for this month's Taste Creations Blog Hop.  I first had Mushrooms on Toast on a visit to the UK, and now that we live here, we can get it any time, from many local restaurants.  But one day when I bought an enormous tray of mushrooms from the vegetable seller at market, I discovered how incredibly easy it is to make it at home, too.

Recipe for Creamy Mushrooms on Toast:

  • loaf of crusty, robust bread (we used our favorite rustic rye bread from a local baker)
  • 1 shallot
  • 2 cloves garlic
  • approximately one pound of mushrooms
  • 1/2 teaspoon salt
  • 1 tablespoon butter
  • 1/2 cup cream
  • 1/3 cup parmesan cheese (optional)
  • fresh flat-leaf parsley to taste

Prep for making mushrooms on toast by slicing everything up--the mushrooms, the shallot, the garlic, the bread.  It's best to have all the chopping done before you start cooking.  It all gets cooked together quickly and at one time.

I used a combination of white button and chestnut mushrooms, but you can choose any kind you like.  It's all delicious!

Cook the mushrooms, garlic, and shallot over high heat in a large saucepan with the butter and salt.  Cook, stirring frequently, until the mushrooms are cooked through, and any released liquid evaporates and the mushrooms begin to brown.  That maillard reaction (the browning) builds incredible flavor.

If you want to add a step, it's lovely to deglaze the pan with a little white wine (maybe half a cup) at this stage.  I didn't have any wine on hand, and just went ahead to the next step, but it's absolutely delicious both ways.

Once the mushrooms are cooked, turn off the heat.  Add the cream and parmesan, and stir to combine and coat the mushrooms well.

The parmesan is completely optional.  This recipe is delicious without it, too, but my family absolutely loves parmesan (and cheese in general), so this is the way we always make it at home.

Add some fresh parsley as garnish.

If you love mushrooms, this is absolutely magical!  Much better than the prosaic name "Mushrooms on Toast" might lead you to believe.
