Cookie dough ice cream sandwiches are the perfect homemade ice cream treat. Homemade no churn vanilla ice cream is sandwiched between two wafers of edible cookie dough, and dipped in chocolate. No baking required!
I'm the kind of person who digs the chunks of cookie dough out of cookie dough ice cream. I'm not proud to admit it, but it's true. I just love those chunks of chocolate chip cookie dough encased in a layer of ice cream--but not too much ice cream. That's what inspired me to make cookie dough ice cream sandwiches for this month's Taste Creations Blog Hop. That way I could get the perfect ratio of cookie dough to ice cream.
Edible Chocolate Chip Cookie Dough (No Eggs)
- 1/3 cup butter, softened (75 grams)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 3 Tablespoons white sugar
- 1/3 cup brown sugar, packed (66 grams)
- 3/4 cup AP flour (96 grams)
- Milk or cream to create the right texture (1-3 teaspoons, typically)
- Chocolate chips to taste
I got this delicious recipe from Chelsea's Messy Apron. Before you get started making the cookie dough, check out this excellent article detailing how to heat treat the flour to ensure it's safe to eat. If you heat the flour to kill any possible lurking bacteria in the flour, and make this recipe with no eggs, this cookie dough is safe to eat. Hooray!!
Cream the butter and sugars. Mix the salt, vanilla, and flour and mix to combine. Add milk or cream 1 teaspoon at a time until the the cookie dough comes together. Add the chocolate chips and mix.
Roll out the chocolate chip cookie dough and cut out small shapes (I used my favorite circle cookie cutters to make small ice cream sandwiches, just a few bites each. Just the right serving size.
I like to roll the cookie dough out on parchment, then lift away the excess dough. That keeps the cookie dough in the perfect shapes.
Freeze the circles of edible cookie dough.
Cookie Dough Ice Cream Sandwich Filling
No churn ice cream is the perfect filling for these cookie dough ice cream sandwiches because you can pipe it perfectly on the cookie dough circles. I could not figure out how to use pre-made ice cream without making a big, sticky mess. No churn is absolutely the way to go for this recipe.
Small Batch No Churn Vanilla Ice Cream
- 1 cup heavy whipping cream
- 1/2 can (212 grams) sweetened condensed milk
- 1 teaspoon vanilla
Beat the whipping cream to stiff peaks. Fold in the vanilla and sweetened condensed milk.
I used a disposable piping bag to put just the right amount of vanilla ice cream filling on my frozen disks of edible cookie dough.
Once the cookie dough ice cream sandwiches are filled with the no churn ice cream, return them to the freezer to freeze the ice cream centers.
The cookie dough ice cream sandwiches are just magnificent like this, but I wanted to dip some in chocolate, too.
I dipped half of each cookie dough ice cream sandwich in melted milk chocolate.
The chocolate hardens quickly on the frozen treats, so it doesn't take long before you can put the ice cream sandwiches in a freezer bag or box.
My daughters think I'm pretty much a genius now. After tasting these cookie dough ice cream sandwiches, I'm inclined to agree. They're amazing!
